For some reason this question is asked quite often. Dumplings with cherries are cooked for the same amount of time as other dumplings: after boiling for 2-3 minutes, that is, until they float to the surface. Experienced housewives determine the cooking time by the smell of the finished dough.

How to cook dumplings with cherries

  1. We wash the cherries, remove the stems and seeds. Sprinkle the berries prepared in this way with granulated sugar and set aside so that they release juice.

  2. Dough recipe for cherry dumplings. In the meantime, we are preparing the dough. To do this, combine the egg, kefir, salt, soda and vegetable oil in a deep bowl. Mix with a fork or whisk until smooth.

  3. Gradually add flour (literally 1 tablespoon at a time), sifting it through a sieve. Mix with a whisk without beating.

  4. As soon as the dough becomes more viscous and begins to stretch behind the whisk, continue to sprinkle flour, but knead it with your hands.

  5. The dough should stop sticking to your hands, but not be too tight and “clogged.” Depending on the quality of flour, the fat content of kefir and the size of the egg, different amounts of flour may be needed - from 300 to 400 grams.

  6. Forming and cooking dumplings. How long to cook? Divide the dough into two parts, and then roll each into a thick sausage. Cut it into segments - about 2-3 centimeters thick. You don't have to skimp on the dust of flour.

  7. We strain out all the resulting juice from the filling - it’s convenient to pour the berries into a colander and place a bowl underneath (we won’t use the juice to make dumplings, but you shouldn’t pour it out, you can cook a compote or make a sauce). Roll out the pieces of dough into thin flat cakes, place a cherry in the center of each and sprinkle it with additional sugar - about 0.5 tsp.

  8. Pinch the edges of the dumplings tightly. When modeling, we try not to let the cherry syrup get on the edges of the dough, otherwise it will fall apart during cooking.

  9. We repeat the procedure until all the dumplings with cherries are formed. Place them on a work surface or on a board generously sprinkled with flour.

  10. Boil the dumplings in boiling, lightly salted water (add 0.5 tsp of salt per 4-5 liters), adding them in portions. Cook for 2-3 minutes after they float to the surface.
  11. Remove the finished dumplings from the pan with a slotted spoon. Transfer to a convenient container, preferably a ceramic bowl. Grease the top with butter and sprinkle with sugar. While cooling, shake the bowl several times without damaging the dumplings with a spoon - this way they will mix evenly, not stick together, and will be soaked in the dressing.

  9. Steamed dumplings with cherries can be prepared in several ways: by stretching cheesecloth over a pan or installing a special steamer pad on it, in an electric steamer, or a pressure cooker.

    If you cook the old fashioned way, on gauze, pour water into a wide pan (up to 1/3-1/2 of the height), tie the gauze on top (just so that the edges do not hang, otherwise they may catch fire). Cover with a lid and bring the water to a boil. Then place the dumplings on cheesecloth, spaced apart, and cover with a large bowl. Cook for 5 minutes.

    If you have a steamer, pour water into it, grease the bottom of the bowl with oil and place the dumplings. Cover with a lid and cook for 10-15 minutes.

I prefer the second method. A good piece is pinched off from the dough ball, rolled into a ball and rolled out into a large thin circle. Then round blanks for cherry dumplings are squeezed out with a cup or glass.
So, the filling for the dumplings is ready, as are the round pieces. Place the cherry filling in the center of the circle, sprinkle sugar on it and connect the ends of the dumpling to form a semicircle.

In a multicooker, dumplings with cherries can be steamed or in the multicooker bowl itself. It's very simple!

Boiling water is poured into the multicooker bowl (to start the cooking process faster), 3-4 glasses will be enough.
