Preparation

Boil potatoes in their skins. Boil thick semolina porridge in water, add salt to taste and cool. Peel the potatoes and mash them into a puree. Add chilled porridge and egg to the puree, mix everything until smooth.

Fry chicken liver with onion, cut into half rings. Do not salt the liver - salt is contained in sufficient quantities in feta cheese.

Grind the liver and onion in a food processor (not very finely). Cut the cheese into cubes and mix everything.

Make flatbreads from potato dough, put 1 teaspoon of filling on them, and put another flatbread on top. Seal it in the shape of a pie. Fry in vegetable oil.

Zrazy "Chicken Ryaba"

Ingredients

  • Minced chicken - 700-800 g
  • Milk
  • Egg (boiled, for filling) - 3 pcs.
  • White bread - 2-3 slices
  • Semolina - 3-4 tbsp. l.

3. Take the minced meat with your hand and roll it into a ball. Place it on a board and form it into a flat cake. Using a spoon, spread the filling onto the meat, pinch the edges together as if you were making pies. Form a cutlet. Then roll in breadcrumbs.

4. Fry meat zrazy with egg on both sides in sunflower oil in a preheated frying pan.

  • 400gr. chicken fillet;
  • 1 small onion;
  • 50gr. semolina;
  • 1 egg;
  • Salt to taste;
  • Breadcrumbs 70g.

Cut the fillet and onion as finely as possible, add semolina, egg and mix everything, leave for 20.

Then take the minced meat, make a ball out of it and flatten it into a flat cake. Now you should put the prunes, close them, roll them in breadcrumbs and fry them. Then simmer in a deep frying pan in the sauce until cooked.

What are zrazy

Zrazy (meat rolls) is the most popular dish on holiday tables in Russia and Eastern European countries. Each nation, as well as different housewives, prepares them in a special way. For example, in a Polish restaurant I was lucky enough to try a delicious dish called “zrazy”.

A filling of various ingredients (there were mushrooms, onions and croutons) was wrapped in a thin piece of beef, fried until golden brown. They were served with a side dish (potato dumplings with stewed asparagus) and sour cream sauce. Salt, pepper and mustard were used as spices for meat.

When I was a little girl, my mother often prepared potato zrazy with meat, adding cabbage twisted in a meat grinder to the minced meat. Everyone except me loved this dish. The gravy was unusual but I also didn't like it. I don’t know what has changed since then, only now I love my mother’s zrazy and prepare it for my family (my kids are delighted with it too!).

At home I prepare this dish in different variations. Ingredients for the classic “zraza” recipe for four adults: butter (5 tbsp), vegetable oil (3 tbsp), a lot of onions (chopped fits in 1½ cups), the same amount of mushrooms, a quarter cup breadcrumbs, teaspoon salt, ½ tsp. pepper, 900 grams of beef, 2 tsp. mustard, 3 tbsp. l. flour, a glass of sour cream and meat broth.

Classic zrazy

1. In a frying pan, fry mushrooms with onions in vegetable oil and butter in a ratio of 1:2. They take about 10 minutes to prepare.

2. Then mix the contents of the frying pan with breadcrumbs, salt and pepper, taken in the amount of ½ and ¼ tsp.
To prepare meat zrazy, I cut a beef steak into eight thin slices. I sprinkle with salt and pepper, coat with mustard, put mushrooms and onions on them, distributing equal portions among all the meat plastics (there are 8 of them).

3. I roll the zrazy into rolls, tie it with thread, and roll it out in flour.

4. Place them in a frying pan with the remaining oil. Fry over high heat until they turn golden brown. It takes about 15 minutes to fry.

5. Transfer to a wide pan in one layer. I pour beef broth (pre-cooked on the bone) over them.

6. When the contents boil, place in a preheated oven for 40 - 45 minutes. Zrazy is prepared at a temperature of 170 ° C.

I don't do anything special to make the sauce. I remove the meat from the broth (remove the threads). I put the pan on high heat, add sour cream and herbs (whatever you have in the house) and remove when the contents boil. We usually put this dish on the table without a side dish. In Russia, they often prepare this dish from minced meat, and it’s also delicious!
